Spiced Soupy Apple & Oatmeal

On this early morning the ground is covered with a blanket of snow. Outdoor temperatures are forecast to rise to the lower forty degrees Fahrenheit. A damp chilly air isn't a favorite of this love winter person.

A love I discovered by  mistake (added too much water) is spiced soupy oatmeal with apple.  Dicing up the apple like an onion is easier than cutting the fruit like a peeled potato. This way the skin goes into the mix (without leaving  big pieces to get in the way).

Spice Soupy Apple & Old Fashion Oatmeal

Add an extra 1/2 to 1 Cup of water to the (not instant) oatmeal directed amount
Add to taste cinnamon and/or applie pie spice to the boiling water
Dice up 1 apple (photo), add to the water, and simmer 2-3 minutes or until largest piece is soft
Add oatmeal, stir, turn off burner, cover, and let rest for 5 minutes before serving

It also makes a good soup base for lunch...add chunks of ham or diced sharp cheddar cheese

      You welcome. Winter is all about soup. There's recipe for oatmeal in chili on this blog that didn't turn out as well as the soupy oatmeal on the first try. lo
