Easy Squash Soup

A new variation of a favorite, squash soup

1 package of frozen squash
3 medium onions chopped
2+/- Tablespoons olive oil
1 celery center (3-4 small stalks) including leaves
1/4 Cup chopped parsley
1 or 2 cups of water (adjust your own consistency)
1/4 Cup instant mashed potatoes or 1 Cup mashed potatoes to thicken
Black pepper to taste

 Saute the onions in olive oil
Add all the other ingredients
Cook on medium slow until celery is tender or al dente

I doubled the usual amount of onion to add texture in this squash soup variation of the other recipe.
I also used only the celery center, the bunch of little stalks inside the stalks as opposed to chopped celery stalks. The celery center has a lot more flavor. Be careful if your bunch of celery has a large center. Then use only 3 or 4 of the pale yellow stalks.
